This Australian lamb rack is well known for its tender meat texture, with small amount of fat, just enough so there is a smooth meat texture, but not too much that it will make your mouth full of oil. Cooked by sous vide, the meat texture is preserved and the juice is kept within the meat.

Please completely defrost and follow the instructions below:
1. Boil water to 100 Degrees Celsius.
2. Turn off the flame. Put the pack into hot water and let sit for 4 minutes. Keep pot lid off. 
3. Open package and take lamb rack out.
4. Dry lamb rack with kitchen paper towel.
5. Take herbs out from the package and place aside with butter for later use.
6. Heat pan in high flame with oil until hot and a little white smoke is produced. 
7. Put lamb rack into the pan and sear for 1.5 to 2 minutes .
8. Flip the lamb rack and add butter and herbs next to it.
9. Baste melted butter onto the lamb rack while searing for another 1.5 to 2 minutes
10. Your lamb rack is ready to be served!
